Ingredients for Besan Sev recipe
Gram flour (Besan) 02 cups
Turmeric Powder 1/2 Spoon
Red Chili Powder 1/2 Spoon
Carrom Seed (Ajwain) 01 teaspoon
Oil 02 tablespoons (to be added to flour)
Asafoetida 01 pinch
Baking soda 01 pinches (optional)
Oil 03 cups for deep frying
Salt as required

How to make Besan sev (Sev recipe)
Making Sev dough
- To make Besan ke sev, strain the gram flour with a sieve and keep it aside.
- Now take it in a large bowl, add turmeric powder, red pepper powder, and salt as per taste and mix well.
- Add carom seed (ajwain) and a pinch of asafoetida and baking soda to this mixture and mix.
- Now add 2 tablespoons of hot oil slowly in this mixture and mix well, for this you use both palms.
- Slowly pour water into it and keep whisking.
- Keep in mind that your dough should be soft and smooth. Do not add more water otherwise, it will become sticky, if it is too wet then add gram flour.
- Cover the dough prepared with a damp cloth and keep aside for a while.
- Remove the cloth before frying, and knead again.
How to make besan sev
- After a while, remove the damp cloth and knead the dough well.
- Heat oil well in a pan.
- Grease a little oil in the palms and make a roll with a little bit of flour, pour it into the cylinder of the save maker.
- Place the save maker on top of the oil and apply pressure by hand. There are many types of mesh in the Save Maker, from which you can make fat, thin or other shapes.
- Fill the entire pan by rolling the save maker in a rounding, when it is well cooked on one side, turn it with the help of a slotted spoon and fry it on the other side.
- Remove it with a slotted spoon and spread it on a paper towel.
- This will absorb excess oil.
- Re-roll a portion of the dough and fill in the save maker and repeat the whole method again.
- Once all is done, let it cool down to room temperature, fill in an air-tight container. You can use this save for one month.
- Serve it whenever you want and enjoy it with tea.
Suggestions
- If you want to make spicy sev, then add ginger garlic paste, or add other spices.
- Adding oil to the dough will make sev crisp, baking soda is not necessary.
- There are different types of jaalis in the Save Maker, you can give it a new shape.
