Ingredients for Vegetable Cutlet
Potatoes 03 large (boiled and mashed)
Green chili 02 (finely chopped)
Kashmiri red chili powder 1/4 tsp
Turmeric Powder 1/2 tsp
Ginger/Garlic Paste 01 tsp
Green coriander 02 tbsp (chopped)
bread crumbs 1/2 cup
Lemon juice 1/2 tsp
Spinach 1/4 cup (finely chopped and blanch)
Carrot 1/4 cup (finely chopped and blanch )
French beans 1/4 cup (finely chopped and blanch)
Onion leaves 6-7 leaves (chopped)
Salt 1/2 tsp
Corn flour 02 tbsp
Ingredients for batter
Maida (fine flour) 01 tbsp
Black pepper 1/4 tsp (grated)
salt as required
How to make Vegetable Patties
- First, boil the potatoes and let them cool.
- By boiling the green beans, carrots, and spinach for about two minutes put it in a sieve, its excess water will automatically drain out.
- Now prepare a batter by mixing fine flour according to the above-mentioned quantity in a big bowl.
- In a separate bowl add boiled potatoes, add Kashmiri red chili powder, turmeric powder, ginger garlic paste. Mash well.
- Now add cornflour, blanch vegetables, onion leaves, black pepper powder, salt as required, lemon juice, and chopped coriander in this mixture and mix well.
- Now apply oil on your palm and take a small piece of the mixture and make a round shape, then press it to make oval or round-shaped patties.
- Dip these patties in the flour batter and wrap the bread crumbs tightly on both sides.
- Make all the patties in the same way and keep them on a plate.
Fry Vegan Patty
- Heat oil in a large pan, when the oil is hot enough, reduce the flame to medium.
- Slowly add 3-4 balls into it and fry.
- When the patties turn golden brown on one side, flip it over and fry the other side.
- Similarly, fry all the patties in the same way and put them in the paper towel, so that its excess oil gets removed. Vegetable Cutlet (Vegan Patty) is ready, serve it hot with Onion leaves, red chutney, green chutney, or tomato sauce.
Suggestions
- Fry it on medium flame, in high flame, it will remain raw inside.
- We have added carrots, potatoes, spinach, and beans to our recipe. You can add finely chopped vegetables depending on your availability.
- Do not boil vegetables too much, nor too little.
