We have used khoya, semolina, dry fruits, fine flour, and green cardamom in our recipe. If after making Gujiya, dip it in the sugar syrup and take it out, then its taste increases. Children love gujiyas dipped in sugar syrup.

Ingredients for gujiya recipe

For stuffing 

Khoya                                                 250 grams

semolina                                            1/4 cup

Sugar                                                   1 1/2 cups

Green cardamom                          01 tbsp (grated)

Almond                                              01 tbsp (finely chopped)

Raisins                                                01 tbsp (finely chopped)

Cashew                                              01 tbsp (finely chopped)

Ingredients for Dough

All-purpose flour (Fine flour)     300 grams

Pure Ghee                                        1 1/2 cups

Water                                                 1 1/2 cups or for kneading the dough

  • In a large bowl, take fine flour according to the above-mentioned quantity, add some pure ghee and gradually add water and knead a smooth soft dough.
  • To make the dough soft, sprinkle little water and knead it well so that it attains consistency.
  • Cover the dough with a damp cloth and let it rest for about 1 hour.

Prepare the stuffing

  • Mash the khoya well,  and keep aside.
  • After kneading the dough, add mashed khoya and semolina in a deep fry pan and roast till it turns golden brown, keep it in a bowl and let it cool.
  • Add sugar, ground cardamom, almonds, cashews, and raisins to this khoya and mix well. You can add dry fruits of your choice to this. This will enhance the taste of Gujiya.

  • Mash the dough well again, make small balls out of it, now with the help of a rolling pin, roll it like a round (roti).
  • Place stuffing in half of it, keep stuffing slightly inside the roll. Now apply water on the edge and lift the other part and seal it well.
  • Now make your favorite design on its edge. This will seal it more thoroughly.
  • If the seal is not done properly, the gujiya stuffing may burst while frying, and the oil will get burst.
  • Similarly, make gujiyas from all the dough.

  • Put ghee in a large pan and heat it, keep the flame medium. Put 3-4 gujiyas one by one in hot oil and fry. Fry the gujiyas till golden brown on one side, then turn it over with the help of a jigsaw and fry on the other side till it turns brown.
  • Now your Gujiya is ready, serve it with other sweets or snacks.
  • You can also dip gujiyas by making sugar syrup, this will make it taste better.

Suggestions

  • Seal the gujiya well otherwise it will burst after putting it in hot oil.
  • The dough is of great importance in this recipe, give rest at least half an hour for the consistency of the dough.
  • Always keep the flame on while frying gujiyas, neither too fast nor too slow.
  • You can use other fillings like sugar or coconut powder for Gujiya.
