Baingan Bharta recipe is an easy recipe that you can make at home! In this recipe, eggplant is roasted on flame, then fried with ginger garlic paste, and aromatic spices. Some people roast garlic by rooting it in brinjal, both recipes are easy.
Baingan Bharta may not look attractive to you, but this eggplant recipe is very tasty. The fried brinjals are garnished with green coriander and served with hot roti, paratha, or dal-rice.

To roast
Eggplant (Brinjal) 01 (large round shape)
Garlic cloves 4, 5
For Baingan Bharta
Garlic cloves 5-6
Ginger 02 inches (grate ginger and garlic or make a paste)
Green chilies 4-5 (finely chopped)
Tomato 02 (finely chopped)
Onion 01 medium size (finely chopped)
Olive oil 02 tbsp
Red chili powder 01 tsp
Coriander Powder 01 tsp
Turmeric Powder 01 tsp
salt to taste
Green coriander 01 tbsp (chopped)
How to make Baingan Bharta
To roast
- Peel and clean the garlic cloves. Wash and clean the eggplant, with the help of a knife, make incisions from top to bottom on all sides.
- While making the incision, keep in mind that the eggplant should not be cut completely.
- Make small holes and fill the garlic in it.
- Now roast the brinjals well in an open flame, while turning it continuously, roast it till it becomes tender from all sides.
- To see if the eggplant is fully cooked or not, prick it with a fork or knife. If it is less cooked then roast for a while longer.
- When your eggplant is completely roasted, keep it aside to cool down.
- After cooling down a bit, peel off the burnt skin, then put it in water and cut the stalk, and keep it aside. Read also.
Fry eggplant
- Heat oil in a large pan, add onion, and fry it, when it is slightly fried, add garlic, ginger paste, green chili, and fry.
- Now add chopped tomatoes and roasted, add chili powder, coriander powder, turmeric and salt as per taste, and mix well.
- Now cover the pan with a lid and cook for 4-5 minutes.
- When tomatoes are slightly cooked, add eggplant pulp and mix well.
- Keep stirring occasionally by opening the lid.
- Now your baingan bharta recipe is ready, garnish it with coriander leaves and serve hot with roti, paratha, or dal-rice.
