Chicken Chapli Kabab recipe (Peshawar kebab)

Chicken Chapli Kabab recipe is actually a popular food of the Khyber Pakhtunkhwa province of Pakistan. Due to the unique taste, Chapli Kebab can also be called the King of Kebabs. Chicken kabab is a crispy disc textured dish full of flavor and aroma. Chapli Kebab is also known as Peshawar Kebab. It is named after the capital Peshawar.

Ingredients for Chapli Kebab

Chicken                                800 grams (minced)

Onion                                    02 big size (finely chopped)

Tomato                                04 medium size (finely chopped)

Mint                                      02 tbsp (finely chopped)

Coriander                            02 tbsp (finely chopped)

Egg                                         01

Ginger paste                      01 tsp

Garlic paste                        01 tsp

Cumin                                   01 tsp

Turmeric Powder             01 tsp

Paprika                                 01 tsp

Black pepper                      1/2 tsp (finely grind)

Garam Masala Powder 01 tsp

Green chilies                      4-5 (finely chopped)

Whole coriander              2tsp

Fennel                                  2tsp

Salt                                         as per taste

Extra Virgin Olive Oil       03 tbsp

Preparation for Chapli Kebab

  • Roast cumin, coriander, Black pepper, and fennel in a pan for about 1 minute, when the aroma starts coming, remove from heat.
  • Now immediately add garam masala to this pan and fry some well. Remove the spices from the heat and put them in a food processor, sprinkle a little water, and grind them coarsely.
  • Wash the chicken mince thoroughly and take it out in a clean and dry bowl.
  • Now in this cup chopped Onion, Tomato Ginger, Garlic paste and
  • Add mint leaves and mix well.
  • Now add egg, turmeric powder, paprika, and salt to it, mix it well. Next, add the ground spices and mix well by hand. Do not knead or mix it too much.
  • Close the bowl with cling film and place it in the fridge for about 30 minutes. (Watch video)

Making kebabs

  • Take out the mixture, apply oil to your palms and make the desired shape of the kebabs. Do not make all the kebabs and keep them on a plate, make it before frying.
  • Place a shallow bottomed pan on medium heat, spread 1-2 tbsp oil on it, and let it heat up.
  • Now press the kebabs made from the mince mixture with light hands and give it the shape of a patty.
  • When the oil becomes medium hot, then put the chicken chapli kebabs in the pan. Fry the chapli kebabs on a medium flame till they turn golden brown in color from both sides. It takes around 10-12 minutes.
  • You can fry around 3-4 kebabs in one batch.
