Potato 300 grams
Tomato 02 (chopped)
Red chili powder 02 tsp
Turmeric Powder 01 tsp
Green chili 2-3(chopped)
Ginger 01 inch (grated)
Bay leaf 01
Cumin seeds 01 tsp
Kalonji seeds 1/2 tsp
Oil 02 tbsp
Mango powder (amchoor) 01/2tsp
Coriander leaves 01 tbsp for garnish
Garam Masala Powder 1/2 tsp
Salt as per taste

How to make Aloo Tarkari
Step-01
- First wash and peel the potatoes, now cut the potatoes into cubes and put them in water. Now put the potatoes in a pressure cooker and cook them.
- When the cooker cools down, please take out the cooked potatoes, mash them lightly, and keep them aside, do not mash the potatoes too much.
Step-02
- Now put oil in the pan and heat it.
- Add bay leaves and cumin seeds to the hot oil and fry.
- Now add chopped green chilies, ginger, and tomatoes and cook till it becomes soft.
- Add red chili powder, turmeric powder, garam masala powder, Kalonji seeds, and mango powder (amchoor) to the roasted mixture and stir well.
Step-03
- Boil this mixture by adding mashed potatoes, water, and salt, keep it thin or thick according to your desired consistency.
- After it cooks a little, garnish it with coriander leaves.
- Now your potato curry is ready, serve it hot with roti, naan, puri, or rice and enjoy.
Suggestion
- You can add asafoetida or other spices as per taste in this recipe.
- Don’t make the potato turkey too thin or thick, keep a medium consistency.
