Zarda Rice Recipe (meethe chawal)

Basmati or Sela rice 250 grams
Star anise (Chakra Phool) 01
Cloves 5-7
Green cardamom 4-5 (crushed)
Sugar 200 grams
Almonds 10-12 (sliced)
Cashew nuts 10-15 (sliced)
Pistachio 10-15 (sliced)
Raisins 15-20
Dry coconut 02 tablespoons (finely chopped)
Ghee 03 tbsp
Milk 1/2 cup
Tutti- Frutti 01 tbsp
Yellow or orange (food color) as required
Saffron 10-12 threads
How to make Zarda rice recipe
Preparation
- To make zarda pulao, first, wash it and soak it in water for about 45 minutes in a bowl. After about 45 minutes, remove the excess water and keep it aside.
- Cut all dry fruits and keep them aside on a plate.
- Take 1/2 water in the cup and soak the saffron for about 14-20 minutes. Take 1/2 Now add milk to it and mix well.
Cook rice for the zarda pulao
- Now put 3-4 cups of water in a big pot and boil it.
- Add a little yellow or orange food color to this pan, and let the water boil.
- When the water comes to a boil, add soaked rice and stir in it.
- Cover the pan with a lid and cook the rice for about 10-12 minutes in medium flame.
- Remove the lid of the rice and check it twice, you have to cook about 75-80 percent of the rice.
- After cooking for about 15 minutes, reduce the heat and cook lightly.
- Now turn off the gas, pour the rice in a sieve and remove the excess water.
Zarda rice recipe
- Now put a heavy-bottomed pan or pan on the gas, add desi ghee to it.
- With the help of a spatula, spread ghee in the pan, it will not stick the rice in the pan.
- After the ghee melts, add cloves and fry it.
- Now add grated coconut, almonds, and cashews, raisins, and fry it lightly.
- Add saffron milk to it and mix well, now add ground green cardamom and sugar and stir it.
- In about 4-5 minutes the sugar dissolves well and lets it boil. Add cooked rice to it and stir slowly and make sure the sugar and rice are well mixed.
- Now cover it with a lid and cook, but keep stirring it occasionally. This will not stick the rice in the bottom.
- Cook it till the rice is cooked completely.
- After the water dries up, your zarda rice is ready.
- Now turn off the gas and let it rest at room temperature for 10 minutes.
- Remove the lid from the pan and add the broken fruity from the top and mix slowly.
- Serve the zarda rice (meethe chawal)hot- hot with dinner.
