Chicken Karahi Recipe (Kadai Chicken)
Chicken Karahi (kadai chicken) is the most desired spicy food among all the food items in Pakistani and North Indian cuisine. It is made using chicken pieces, tomatoes, ginger-garlic paste, and spice mix. Here’s how you can easily make Chicken Karahi at home:
Ingredients
Chicken 1 kg with bone (cut into pieces)
Tomatoes 4 large ( chopped)
Onion 1 large (thinly sliced) or if you are dropping the onions, then you can skip them
Capsicum 1 (cubed)
Green chilies 4-5, sliced
Ginger-garlic paste 2 tbsp
Ginger 1-inch piece, thin slices (for garnish)
Yogurt ½ cup, optional (for extra richness)
Coriander powder 1 tablespoon
Cumin seeds 1 teaspoon
Red chili powder 1 teaspoon (adjust according to taste)
Turmeric powder ½ teaspoon
Garam masala 1 teaspoon
Black pepper ½ teaspoon
Salt to taste
Oil or ghee ½ cup
Fresh coriander leaves for garnish
Instructions:
Add Onion and capsicum:
Add 2 tbsp ghee (oil) to the karahi, then add chopped onion and capsicum, and fry for about 2-3 minutes or until it turns transparent. Take it out of the vessel.
Heat Oil:
Take a large karahi (wok) or deep frying pan, and heat oil or ghee in it over medium heat.
Cook Chicken:
Add the chicken pieces and let it get white and a little golden brown on the edges.
Add Tomatoes:
Chop the tomatoes and add it to the mixture. Let it cook till it becomes soft.
Add Aromatics:
To that, add the ginger garlic paste. Let it get fragrant by sautéing it for two minutes.
Add coriander powder, cumin seeds, red chili powder, turmeric powder, and salt. Mix well. To that, add this masala on medium heat and stir till oil separates from the masala. Add roasted onions and capsicum
Simmer:
Cover it and cook it on low flame for about 20-25 minutes, keep stirring in between. The chicken should be well done and the sauce thickened. Add a little water if necessary, so that it does not stick to the bottom.
Add slit green chilies and yogurt if using. Mix well and continue to cook for another 5-7 minutes till the oil surfaces again.
Finish with Garam Masala and Ginger: Sprinkle garam masala and black pepper on the chicken. Garnish it with thin slices of ginger and fresh coriander leaves.
Serve:
Serve hot with butter naan, paratha, roti, or steamed or jeera rice.
