Jaggery Rice (Gur Wale Chawal)

Ingredients for Gur rice
Basmati Rice (Long Grains) 200 grams (soaked for about 35 minutes)
Jaggery 150 grams
cinnamon stick 01 inch
Green cardamom 3, 4 (slightly crushed)
Cashew nuts 02 tbsp (chopped)
Almonds 02 tbsp (chopped)
Raisins 5,6
Bay leaves 02
Clove 02
Fennel 01 tsp
Pure ghee or Butter 1/4 cup
Saffron threads 3.4 threads
Cherry 5,6
Thick cream 2 tbsp
water as needed
How to make Gur rice
Preparation
- Wash the rice thoroughly and soak it in a large bowl in 2 cups of water for about 35 minutes.
- Put a spoon of ghee in a pan and let it heat up, when hot, add cashews, almonds, raisins and fry till it becomes light brown. Now take out the dry fruits and keep aside.
- Grind jaggery and add with 2 cups of water, do not let it stir. Allow the jaggery to melt slowly, do not stir. In about 5,7 minutes it melts and becomes syrup.
Method
- Now keep about one liter of water boiling in a vessel, when it comes to boil, add soaked rice and let it boil again. Make sure that the rice is not completely cooked.
- Sieve it in a sieve and allow excess water to drain out.
- Now put a large vessel in the flame, put pure ghee in it and heat it, keep the flame medium.
- Add ground bay leaf, cardamom, fennel, clove, cinnamon to it and cook, fry it after few seconds or till fragrant.
- Now slowly pour thin syrup of melted jaggery.
- Boil it lightly then add the filtered rice to it. Now add roasted dry fruits to it and do it well.
- Turn the flame to medium and stir well, cook it for 1-2 minutes and let it boil.
- Now cover it with a lid and cook it, at this time reduce the flame.
- Cook for about 18- 20 minutes so that all the moisture gets absorbed and the rice is also cooked well.
- Your jaggery rice is ready, spared saffron threads and serve it hot with Cherry and thick creams.
Suggestion
- Use good quality rice and jaggery, it will taste good and make the rice edible.
- Jaggery rice cooking time may different, It depends on the nature of the rice.
- Once done, it should be cooked on low flame by stirring it well to avoid moisture in the rice, otherwise rice will become wet.
