Ingredients required for Til barfi recipe
Sesame (White) 250 grams
Jaggery 200 grams
Pure ghee 50 grams
Green cardamom 7-8 (coarsely crushed)
Pistachios 10-12 (finely chopped)
How to make Til ki barfi
Step 1
Roast the sesame seeds
First of all wash and dry the sesame seeds (Til) well, then place a gas pan and add sesame seeds and roast them on low flame. On roasting, the color of sesame starts changing and it swells up. Sesame seeds get roasted in about 2,3 minutes. Take out the roasted seeds in a plate and let it cool.
* Keep in mind that more roasted sesame becomes bitter in taste.
Step 2
Prepare syrup
- Now put some ghee in the same pan and heat it, when the ghee melts, add jaggery according to the quantity written above, when the jaggery melts, add 2-3 teaspoons of water and mix.
- Cook the mixture of jaggery and water till it starts bubbling. When bubbles start rising, add a few drops of water to it, and check. If the syrup does not spread, it is ready.
Step 3
Grind sesame seeds
You can grind the cold sesame till the syrup is cooked, this will save time. Put the cold sesame seeds in a mixer jar and grind them, keep the mixture a little coarse, don’t grind it too much. Take it out in a bowl and keep it aside.
Step 4
Make Til ki barfi
Now your sugar syrup is ready as well as sesame mixture. Put the ground sesame seeds in the hot jaggery syrup and mix well on low flame. Add each crushed cardamom to this mixture and mix. Mixing the whole mixture well, cook it till it gets set consistency.
Step 5
Barfi cutting
- Now your barfi mixture is ready, grease a flat surface or plate with pure ghee from your palm and pour the mixture onto the plate. Spread it evenly on the surface, garnish it with chopped pistachios and let it cool for about 30 minutes.
- Take your barfi is ready, cut it into desired shape with the help of a knife and keep it in a container.
- You can use Til barfi for about 1 month.
Suggestion
- While melting the jaggery, keep the flame medium and add the ground sesame seeds after the syrup is cooked a little.
- Add water to the sugar syrup carefully, due to excess water, the barfi will not set.
- Roast the sesame while stirring continuously, else it will become bitter in taste if it gets burnt. ,
- You can also make this barfi without ghee.
- If you want, you can mix sesame seeds with jaggery without grinding it.
- You can also garnish with other almonds, cashews or grated coconut instead of pistachios.
