Pickled Peas Recipe (Matar Ka Achar)

Ingredients for Green Peas Pickle
Green peas 02 tbsp
*spoon 1 cup = 1 tsp
Sugar 01 tsp
Yellow mustard 01 tbsp
Fennel (saunf) 02 tsp
Cumin 01 tsp
Fenugreek seeds 01 tsp
Ajwain 01 tsp
Black pepper 8-10
Kalonji – ½ tsp
Whole coriander 01 tbsp
Mustard oil 02 tbsp
Asafoetida 01 pinch
Turmeric Powder 01 tsp
Kashmiri red chili powder 02 tsp
salt as required
Black salt 01 tsp
Vinegar 02 tbsp
Green Peas Pickle Recipe
Step -01
Boil peas
- First of all peel the peas and wash them with clean water to remove excess water. Put 1 glass of water and peas in a large pot and heat it. When light bubbles start coming in the water, add 1 tsp sugar to it. By adding sugar, the color of peas remains completely green.
- Cook till the water starts boiling, and turn off the gas.
- Sieve the peas by putting them in a sieve.
- Pour cold water in a large vessel, put some ice cubes in it and add peas and leave it for about 5 minutes. Remove it from the water and put a cotton cloth, keep the cloth under the fan for 20 minutes so that the peas dry completely.

Roast spices
- Now put pan on low flame, fennel, whole coriander, black pepper, cumin, fenugreek seeds, and celery in a pan and roast it for a while. Add yellow mustard to it and fry for 1/2 minute. Take out the prepared spices in a plate and let it cool.
- Put the roasted spices in the mixer grinder and grind coarsely.

Make Pickled Peas Recipe
- Now put 2 tbsp mustard oil in the pan and heat it well. Switch off the gas and let it cool down a bit. Add 1 pinch of asafoetida and fennel seeds to this oil and stir.
- In a large bowl, add peas, coarsely ground masala and mix well. Add 1 tsp turmeric, Kashmiri red chili powder, black salt and white salt to it and mix. Add the heated oil to the entire mixture and mix well.
- Finally, add 2 tbsp vinegar to it and mix well. Now your peas pickle is ready, store it in a dry container and use it for several days.
Suggestions
- Do add sugar to this pickle, due to which the green color of the peas will remain green.
- Fill the pickle only after drying the container properly otherwise it may spoil.
- You can store and eat this pickle for about 6 months.
- Use a completely clean and dry spoon while taking out the pickle.
- Keep the peas pickle completely immersed in the oil and shake the jar in between.
