Ingredients:
Paneer Marinade:
Paneer 250 grams (cut into cubes)
Curd 01 cup ( thick )
Ginger-garlic paste 01 tablespoon
Turmeric powder 01 tsp
Red chilli powder 01 tsp
Garam masala 01 tsp
Salt as per taste
Olive oil 02 tbsp
For gravy:
Ghee or vegetable oil 02 tbsp
Onion 01 big (finely chopped)
Tomato 02 (make puree)
Cashew nuts 01 cup (soak in warm water for 30 minutes)
Fresh cream 01 cup
Ginger-garlic paste 01 tbsp
Cumin powder 01 tsp
Coriander powder 01 tsp
Cardamom powder 01 tsp
Salt as per taste
Chopped coriander 01 tablespoons (for garnish)
Instruction:
1. Marinate the Paneer Cubes:
- In a large bowl, mix curd, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and one teaspoon of olive oil.
- Mix the marinade well, now add the paneer pieces, making sure each piece is well coated. Let the coated paneer pieces marinate for at least 30 minutes.
2. Make cashew paste:
Add pre-soaked cashews to the blender, mix it with some water, and prepare a smooth paste.
3. Cook Marinated Paneer:
- Add oil as required for frying in a pan or kadai and heat it on medium flame.
- Now add marinated paneer and cook until golden brown from all sides. Keep it aside.
4. Prepare the gravy:
- Add olive oil in a separate pan and heat it on medium flame.
- Now add finely chopped onion and fry until it turns golden brown.
- Add ginger-garlic paste to it and fry for about a minute.
- Add cumin powder, coriander powder, and cardamom powder and stir it well.
- Now add tomato puree and cook until oil starts separating from the mixture.
- Add cashew paste to it and cook for some time. Add fresh cream and salt to taste.
- Mix the entire mixture well and cook for an additional 2-3 minutes.
5. Mix paneer pieces and gravy:
Now add the cooked paneer pieces to the gravy and stir slowly. Cook on low flame for a few minutes, so that the cheese gets mixed well in the gravy.
6. Serve:
- Remove Afghani Paneer from the gas, garnish with mint leaves and coriander, and serve hot with naan, paratha, or rice.
- Now enjoy your homemade Paneer Afghani, no need to go to a restaurant.
