In this recipe, we have used only curry leaves and rice with lemon juice, however, you can make this recipe by adding different types of vegetables or chicken etc.In this recipe, after cooking the rice, it is tempered with asafoetida and curry leaves. Ingredients for Lemon rice Recipe
Rice 01 cup (or cooked rice – 2 cups)
Urad Dal 01 tsp
Chana dal 01 tsp
Peanuts 25 grams
Green chili 02 (cut lengthwise)
Rai (mustard seeds) 01 tsp
Turmeric powder 1/2 tsp
Asafoetida 1 pinch
Curry leaves 7-8
Red chili 02 (whole)
Ginger 01 tbsp (grated)
Lemon juice 02 tsp
Butter 02 spoon
Salt as per taste
Green Coriander 02 tbsp (chopped finely)
How to make Lemon Rice
Step 01
Cook rice
- To make lemon rice, the first step is to cook the rice. Clean and wash the rice thoroughly. Soak it in a big bowl for about 20 minutes. Now put a deep bottomed pan on the flame and add rice, add water and salt to it and keep it on medium flame. Cook the rice by walking in between, take out a grain of rice and check whether it is cooked or not. Now take it off the gas and put it in a strainer to remove excess water and keep it separately in a vessel.
- While the rice is cooking, cut the green chilli lengthwise, grate the ginger and finely chop the coriander leaves and keep them in a separate vessel.
Step 02
Fry Rice:
- Put a pan on the gas, put 02 spoons of butter in it, keep the flame medium.
- When the butter melts, add mustard seeds to the pan and let them crackle.
- Now add chana dal and urad dal to it. Add green chilies, red chilies, curry leaves, ginger and asafoetida, and fry well.
- In this, add peanuts and add a little turmeric. Now add rice and mix well.
Step 03
Make Lemon Rice:
- Now add required salt and lemon juice to the rice and mix well. Your lemon rice is ready, garnish it with coriander leaves and serve hot with roti, naan or paratha.

- You can use any type of rice in this recipe.
- To make rice more nutritious, you can also add your favorite vegetables to it.
- You can use pre-made rice in this recipe.
- To make rice khila-khila, you put 1 spoon of oil in it while cooking.
